Pumpkin Spiced Banana Nut Muffins

When Fall rolls around, I am reminded of Pumpkin Spice everything. I’ve never had the fancy cup of Pumpkin Spiced latte from a coffee shop, although it sounds delicious! I’ve tried Pumpkin Spiced Coffee from Trader Joe’s and that was good! I used to buy it as often as I could. I love banana nut bread and muffins, so I thought to add a little twist with the Pumpkin Spiced Banana Nut Muffins!

Pumpkin Spiced Banana Nut Muffins

My son and I love muffins. There are times when I buy them from the grocery store bakery!  While they are so delicious, they are costly! I used to buy so many that I’d save the plastic containers they come in to reuse to water my plants in. I have houseplants that need to be watered from the bottom, and the plastic containers are perfect for that.

Pumpkin Spice Banana Nut Muffins served in basket

Ingredients Needed:

1 ½ cups of all purpose flour

½ teaspoon of salt

1 teaspoon of baking powder

1 teaspoon of baking soda

2 teaspoons of pumpkin spice

3 large ripe bananas, ripe

6 tablespoons of salted butter

1 teaspoon of vanilla extract

2/3 cup of brown sugar

1 egg, room temperature

2 tablespoons of milk

1 cup of chopped walnuts

Directions:

1. Preheat oven to 425 degrees Fahrenheit.

2. In a medium bowl whisk dry ingredients together and set to the side.

3. In a large bowl, blend bananas and butter together.

4. Add vanilla, brown sugar, egg, and milk. Mix well with a hand blender.

5. Gently pour dry ingredients into wet ingredients bowl. Mix with hand blender. DO NOT OVER MIX.

6. Once mixed, add in walnuts, and gently fold it in.

7. For jumbo muffins, grease muffin tins and divide evenly over 6 muffin tins.

8. For cupcake sized muffins, grease or add liners into cupcake tin. Divide evenly over 10-12 cupcake openings.

9. Bake at 425 for five minutes, then lower temperature to 350 degrees for 16-18 minutes for jumbo muffins and 13-14 minutes for cupcake sized muffins.

10. Remove from heat and allow muffins to cool.
