I bought my Instant Pot on a whim earlier this year. It was on sale and I couldn’t pass it up. I am not much of a cook and I figured the Instant Pot could make things easier for me. I was originally looking at the smallest one, the Instant Pot 3qt. Now that I have my Instant Pot, I am always looking for easy, fun, and quick recipes to make in my new appliance! Get ready for our Instant Pot Lemon Pepper Brussels Sprouts!

I love eating brussels sprouts! They are full of fiber and keeps me feeling full! Brussels sprouts are the perfect side dish, especially as a vegetarian! Please note: The Instant Pot Lemon Pepper Brussels Sprouts recipe calls for chicken broth, but you can substitute vegetable broth!

Ingredients/Items Needed:
1 pound fresh Brussels sprouts, outer leaves removed and rinsed well
1 cup chicken broth (1 cup) – you can substitute vegetable broth
lemon (1), divided (squeezed)
½ teaspoon whole black peppercorns
¼ teaspoon ground black pepper
Directions:

Remove outer leaves from Brussels sprouts and rinse well. Place in steamer basket.

Add chicken broth (or vegetable broth) to the inner pot and then set the steamer basket in the pot.

Squeeze half lemon over the Brussels sprouts and place the half lemon in the steamer basket.

Add peppercorns to steamer basket.
Turn pressure valve to sealing and set manual pressure on high for 4 minutes.

Do a quick release when pressure time has finished.

Remove steamer basket and sprinkle with ¼ teaspoon ground pepper and then squeeze the other half lemon over the Brussels sprouts.
