Double Chocolate Chip Pistachio Muffins

My son and I love muffins. Every time I buy muffins at the store, he likes to help eat them! We recently made the Double Chocolate Chip Pistachio Muffins and my son and I enjoyed them very much. As always, we can freeze them to enjoy throughout the week or as needed!

Are you ready to make Double Chocolate Chip Pistachio Muffins? You will see we make our muffins just a bit bigger than bite sized. These are the perfect size for my son and myself! Our muffins make a great snack any time of day! 

Ingredients Needed

Double Chocolate Chip Pistachio Muffins Ingredients
  • 2 cups all-purpose flour
  • 1/2 cup cocoa
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup white granulated sugar
  • 1/2 cup packed brown sugar
  • 1 large egg
  • 1/2 cup buttermilk
  • 3/4 cup vegetable oil
  • ½ cup butter, melted
  • 1 teaspoon vanilla
  • 1 teaspoon maple syrup
  • 1 cup semi-sweet chocolate chips, divided
  • 3/4 cup pistachios, roughly chopped, divided

Instructions

Step 1: Preheat the oven to 350 F. Grease or line a 12-cup muffin pan.

Step 2: In a large bowl sift together the flour, cocoa, baking powder, baking soda and salt.

Step 3: In a separate bowl whisk together the oil, egg, sugars, buttermilk, butter, maple syrup and vanilla.

Step 4: Add the wet ingredients into the dry ingredients and mix until just combined.

Step 5: Fold in the 3/4 cup of the chocolate chips and 1/2 cup of the pistachios.

Step 6: Divide the batter equally into the muffins tin. Sprinkle the remainder of the chocolate chips and pistachios. Bake for 16-18 minutes, until a toothpick inserted comes out clean. Cool on wire rack before serving.
