I’m sure you’ve heard about the Keto Diet. I mean, seriously, who hasn’t? It’s everywhere these days!

After reading a few of the incredible success stories of Keto, I was convinced that maybe it wasn’t just a fad. From increased mental clarity to promises of great fertility, there seemed to be many more benefits besides just weight loss.

My husband and I researched carefully the foods that we could and couldn’t eat. It seemed pretty reasonable. We eat mostly high protein and low carb anyways, so it didn’t seem too outrageous.

However, the one difficulty we both had was embracing fats. Our whole lives we’d been taught about the horrors of high fat and the “benefits” of a low fat diet. The idea of adding butter to everything and using heavy cream in my coffee was strange because my brain just couldn’t comprehend putting all this fat into everything I ate.

We started the Keto Diet on the day after Christmas. However, I can say that I’m loving it. The first two weeks were horribly frustrating because the scale didn’t seem to move at all. Ugh. But, my clothes were beginning to fit differently and my energy was greatly improving.

So far, I’ve lost 8 pounds in one month. I’m going at a slow and steady pace.

One key factor that has really helped me has been having quick and easy Keto recipes. Here’s two of my favorite Keto dinner recipes that I’ve used during the week, Keto Mardi Gras Shrimp and Keto Crock Pot Shredded Corned Beef and Cabbage. They’re quick. They’re easy. I love them!

 

First of all, there are so many so many delicious options with seafood and so many ways to make recipes that are Keto-friendly!

I love this recipe for Keto Mardi Gras Shrimp. It is so easy! Just throw it all together in a wok or skillet and let it cook.

 

Keto Mardi Gras Shrimp

To help cure my craving for rice with this dish, I like to prepare it with cauliflower rice and serve it with the shrimp. I just add some of the Keto Luxe Happy Hearts SeasoningKeto Luxe Hot Sauce, and Cajun Seasoning (add seasonings to taste) to the cauliflower rice as well.

Seriously, this dish and the warm blend of spices is exactly what we need for dinner on these frigid winter nights! So satisfying!

Cooking Keto Mardi Gras Shrimp

  1. Add all of the ingredients to wok or skillet. Cook until shrimp is done!

 

Ingredients Keto Crock Pot Shredded Corned Beef and Cabbage

Corned Beef and Cabbage was inspired by a co-worker and quickly became one of my favorite Keto dinners. She mentioned it was one of her favorite dinners to make during these really cold winter nights we’ve been having. As a result, I found myself at the grocery store picking up ingredients to make my own.

The idea of shredding the corned beef and cabbage came from a local Irish restaurant. I had never tried it shredded before, but I liked the idea of it. Because there is less mess to clean up when I can just easily shred it up with a couple of forks in the crock pot, it makes life so much easier.

Normally, I love to add potatoes to my corned beef and cabbage. But, with the blend of the pickling seasoning and the Keto Luxe Magic Sprinkle, it had such a satisfying flavor that my husband and I didn’t even miss the potatoes.

Cooking Shredded Corned Beef and Cabbage

 

Keto Crock Pot Shredded Corned Beef and Cabbage

  1. In 5-6 quart slow cooker, place the brisket fat side up. Sprinkle seasoning packet over the entire brisket. Add just enough water to cover the brisket.
  2. Cover and cook on low setting for 6 hours.
  3. Add cabbage and Keto Luxe Magic Sprinkle. Continue to cook on low for 2 hours.
  4. Once fully cooked, shred the cabbage and brisket in slow cooker.
  5. Serve and sprinkle additional Keto Luxe Magic Sprinkle if desired over shredded corned beef and cabbage.

I really love being able to use Keto Luxe seasonings in all of the dishes I prepare. As a result, it makes cooking and seasoning all of my meals very easy when I’m able to use seasonings and sauces that are preapproved for a Ketogenic lifestyle.
