I am a huge fan of ice cream. My favorite ice cream was Mint Chocolate Chip. However, I remember when I was pregnant with my son, my preference changed to Rocky Road. It has since changed to other flavors. With warmer weather, get ready for Mint Brownie Cheesecake Ice Cream!

Summer is just around the corner! Are you enjoying the sun? The warmer weather is always welcomed. I love going for a walk throughout the day. Just being outside is my way of taking breaks, getting fresh air, and exercise!

I think the Mint Brownie Cheesecake Ice Cream is so delicious and a lovely treat! My son and I love ice cream! He loves when I make this ice cream for us!

What does ice cream remind you of? When I enjoy ice cream, I always think of hot summers! Ice cream was such a treat for us as we rarely had it in the house! So when my parents did get it for us, we tried to enjoy it!

Before we jump into the ingredients you will need, one of the items you will need is mint brownies. You can easily use our Mint Chocolate Swirl Brownies for this recipe!

What you’ll need:

Sweetened Condensed Milk (14 oz)
Vanilla extract
Heavy cream
Powdered Sugar
Cream Cheese
Andres mints baking chips

Mint Brownie Cheesecake Ice Cream

The Mint Brownie Cheesecake Ice Cream recipe is perfect for the hot summer days! Make this for the family to enjoy or for the kids when they want ice cream!

  • 1 can sweetened condensed milk 14 oz
  • 1 TBSP vanilla extract
  • 2 C heavy cream
  • 6 TBSP powdered sugar

Cheesecake Mixture:

  • 8 oz cream cheese room temp
  • 1 TBSP milk
  • 2 TBSP powdered sugar

Add ins:

  • 6 TBSP Andres mints baking chips
  • 1 C crumbled mint brownies



    Cheesecake mixture:

    • Add cream cheese to a medium bowl and mix with electric mixer until smooth.
    • Add in powdered sugar and milk; mix until smooth.

    • Set to the side.

    Ice Cream Mixture:

    • In a large mixing bowl, add heavy cream and vanilla, mix on high with electric mixer for 3-4 minutes.
    • Stiff peaks will begin to form.
    • Add in sweetened condensed milk and mix on low until combined.

    Putting it together:

    • Spoon some of ice cream mixture into a ceramic bowl or loaf pan.
    • Spoon some of cream cheese mixture over ice cream base.
    • Fold mixture to combine.
    • Add 1/2 of the brownie crumbles and 1/2 of the Andes baking chips.

    • Fold to combine.
    • Spoon on another layer of ice cream mixture, continuing to layer all ingredients until loaf pan / bowl is full.

    • Finish with brownies and Andes mints on top.

    • Freeze for several hours or overnight until frozen.

      Right now the weather has been in the 90’s with heat index up to low 100’s. It’s so humid that I am nauseous. I have been craving ice cream to relieve some of all of this and this is perfect
