Me!  That’s right; this mom is way too excited for back to school.  Then it hits me how busy I am going to be. Driving here and there then come home and make dinner-UGH! But this year I have HELP with my back to school recipes- keep reading and you will see who is helping me cook!

Also, my kids are getting bored and cranky, so they need to go back soon.  I feel like summers are getting shorter every year, though. Which I love in one way- I’ll get my house back. I do better in a quiet house and summer is not quiet.

Burgers, Pizza, Bacon, Cookies, and Fried Chicken- OH MY! No wait, I’m not feeding my kids fast food and junk food. I’m feeding them meals I cook at home which is my superpower this school season.

It does A LOT! So I’m thinking about new things to cook and of course trying out Emeril’s Power AirFryer 360 recipe book.  My family loves fried food (thanks to their dad), but I’m not a fan and always wanted to try an AirFryer.  Well, I got my chance!

Stuffed Burgers- Back To School Recipe

This week I made Stuffed Burgers and Roasted Potatoes. It was a HIT! When I mean a hit I mean everyone kept talking about it even days after.  Now I’ve never made Stuffed Burgers before, but the Power AirFryer 360 made it so easy to do! 

Stuffed Cheese Burgers 

Stuffed Burgers- Back To School Recipe
  • 2-pound ground beef
  • 2 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 4 slice bacon, cooked & chopped
  • 8 tablespoon crumbled blue cheese
  • 0.25 cup butter, softened
  • 4 brioche buns
  • Top with Lettuce, Tomato, and Onion 
Instructions

1. Combine the ground beef, Worcestershire sauce, salt, and black pepper.


2. Divide the beef mixture into four balls and divide each ball in half.


3. Press the meat on the counter.

4. Stuff half of the meat with 2 tbsp cheese per burger and top with the unstuffed meat seal the edges of the burgers

4. Slide the Pizza Rack into Shelf Position 2. 
5. Place the burgers on the Pizza Rack.5. Rotate the Program Selection Knob to the Airfry setting (400° F/205° C for 18 mins.). Press the Start/Pause Button to begin the cooking cycle.
6. Heated the buns in there too.  

Stuffed Burgers- Back To School Recipe

Roasted Potatoes

Roasted Potatoes Emeril Lagasse
  • 2 ½ lbs small potatoes
  • 2 tbsp of Olive Oil
  • 1 sprig of fresh rosemary-chopped
  • 2 sprigs fresh thyme-chopped 
  • 1 tsp salt 
  • ¾ tsp of Black Pepper
Instructions 
Stuffed Burgers- Back To School Recipe
  1. Combine all the ingredients in a bowl and toss
  2. Pour the potatoes into the crisper tray and put in shelf #2
  3. Rotate the selection knob to Airfry 400/18 minutes press START, and you are good to go!

This meal was on POINT! 

I usually burn, undercook, or give up and call pizza guys. That dream I had 30 years ago about marrying a chef never worked out, so any help I can get is appreciated. I have to cook at least six days out of the week, so my Power AirFryer 360 will be coming in handy during the school year.

I’m so looking forward to all the time and energy I will save plus the cleanup is so easy maybe the kids can help too. 

I’m thinking about more meals to make like creating our own pizza and oh my using the rotisserie split for a whole chicken.  This past week I’ve made a roast with roasted peppers, perfect bacon (next post about that) and the kids love how it evenly toasts their bagels. We are having a blast with the Power AirFryer 360.
