I have a pretty big sweet tooth, which I work hard to control. Of course, every now again I feel the need to indulge. These days it’s easier to enjoy a delicious treat that’s also full of a few nutritious ingredients. I recently experimented with some new protein powders to create a batch of plant powered chocolate chip cookies. Spoiler alert: The cookies are delish.

Wow, that’s a lot of Ps. Before I share the cookie recipe, I want to talk about all these “Ps”.  They come in the form of PlantFusion’s Complete Protein Powder, Complete Plant Collagen Builder, and Fermented Superfood.

I’m not a big breakfast person. When I do eat that first meal of the day, my go-to is a green smoothie. In order to make my smoothies as creamy and rich as possible, I use a lot of frozen goodies. I freeze my ripe bananas, use frozen fruits, and even freeze fresh spinach. Although my smoothies taste more like a milkshake than just another healthy drink, they never really fill me up. Cut to a few hours later, and I’m starving.

To make my smoothies more filling, I add hemp or chia seeds, and lately, the PlantFusion Complete Protein in Natural. While the plant powered powder comes in five flavors, from Chocolate to Red Velvet Cake, I’m so happy they sent me Natural. I love having a protein powder that doesn’t change the flavor of my smoothie and contains no added sugar. (Note: all of the PlantFusion’s protein powders, which the exception of Natural, contain Stevia.)

Complete Plant Collagen Builder

 In addition to drinking smoothies, I also incorporate collagen powder into my diet. Collagen is naturally found in the body. It helps repair muscles and joints and keeps hair and nails healthy. As we age, we produce less and less collagen.

Some studies suggest that taking a collagen supplement can help improve skin and may help with muscle recovery. I’ve been using collagen for about a year and find it has made a difference in my hair, nails, and skin. It’s not a magic pill, but it does produce results.

One of the challenges I face with taking collagen, however, is not being able to find a plant powered option. Most collagen peptides are made from the bones of bovines and marine animals. While these are effective, they aren’t viable options for vegetarians or vegans. Enter the PlantFusion Complete Plant Collagen Builder.

Available in three flavors, Natural, Creamy Vanilla Bean and Rich Chocolate, this collagen supplement is a blend of fruit extracts, ceramides, and white tea. It’s Non-GMO, gluten-free, vegan, and free of allergens, and artificial colors and flavors.

The brand was kind enough to send me the Creamy Vanilla Bean to test out. I have to say, I’m not a fan of flavor or the texture, with some exception. Typically, I drink my collagen in water, so I prefer a flavorless variety, or at least one that tastes like fruit.

I don’t like vanilla flavored water, nor the fact that PlantFusion powder doesn’t dissolve well in water. Instead, I incorporate the Vanilla Collagen Builder into my smoothies. I find it performs better this way. I would be curious to try the Natural Flavor as I think it might align more with how I like to take collagen.

Last but not least, the PlantFusion Fermented Superfood Protein, which I used in the chocolate chip cookie recipe. The powder is available in Rich Chocolate and Vanilla Chai. As a huge chai drinker, I couldn’t wait to give it a try.

This powder is so unique. It is made from fermented foods, which help promote and aid gut health. You might have heard about the benefits of eating fermented foods like kimchi, sauerkraut or drinking Kombucha. The fermentation process used in these foods can help improve your body’s ability to produce healthy gut bacteria. The more good bacteria in your tummy and digestive tract, the better your digestive and immune system will perform.

The Strongest Chocolate Chip Cookies

Ingredients

  • 2/3 cup melted coconut oil
  • 2/3 cup coconut sugar
  • 2/3 cup white sugar (You could use all coconut sugar or another alternative like stevia)
  • 3/4 cup unsweetened flax milk
  • 2 teaspoon vanilla
  • 1 cup all-purpose flour (Alternative: use 1 cup gluten free flour)
  • 1/2 cup cake flour (Alternative: use 1/2 cup gluten free flour)
  • 1 cup Vanilla Bean PlantFusion Vanilla Chai Fermented Superfood (Alternative: Chocolate Fermented Superfood)
  • 1 tbsp potato starch
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 10 oz bag dairy-free, gluten-free, chocolate chips (I used vegan dark chocolate chips)

Instructions

  • Preheat oven to 350 degrees.
  • In a medium bowl combine coconut oil and sugars.
  • Stir in remaining ingredients before adding chocolate chips.
  • Scoop onto parchment lined baking sheet and bake at 350 degrees for 13-15 minutes. Let cool and enjoy.
