Fun Eats For The Big Game - Homemade Soft Pretzels

Game Day is fun at our house. No matter which big game day it is, whether it’s the Super Bowl, a basketball championship or the olympics we here at my house like to celebrate with some good food to go along with the fun.

Last year we spent most of January and the beginning of February getting over bouts of sickness (including the stomach flu) that crashed through our family in waves. I didn’t have the energy to plan, prep, or make fun snacks to make for us to enjoy during days that football was on. I was lucky if I had enough energy to throw a frozen pizza in the oven (and stay awake long enough to take it out when it was done) or manage to open a bag of tortilla chips and chill a bowl of salsa.

I did manage to make one fun treat, though, as we all started to get (and stay) well from our illnesses. I forget now where I saw these (somewhere online), but I thought that the little football-shaped chocolate-covered pound cake snacks would not only be delicious but get me back in the kitchen. I’d done little more during our illnesses than warm up soup, or make frozen pizzas or sandwiches. We were that sick!

I picked up a pound cake at the grocery store, then sliced it and cut football shapes out of it. Each one was skewered with a plastic fork (for serving) and dipped in chocolate frosting that I’d microwaved for about a minute to melt it a bit. Melted white frosting piped on top in roughly the shape of laces completed that simple treat.

This year, I decided to make up for the lack of homemade snacks last year by making shredded pork sandwiches with a huge Boston Butt cut of meat I found for 50% off at the grocery a few weeks ago, some Homemade Soft Pretzels & Bacon Beer Cheese Dip, and for a bit of sweet some Mini Oreo Football Truffles.

The longest part of prepping the Boston Butt was thawing this behemoth out. It’s pretty big … 7.7 lbs. I took it from the freezer and put it in the refrigerator on Thursday so that it would be thawed out by today when I planned on putting it in the crockpot. I seasoned it with salt, pepper, and a little garlic powder and seared it on all sides in a skillet before dumping it in the crockpot.

Then it was just a waiting game until it cooked enough to be able to shred it. I’m planning to put half of the finished meat in an airtight container to make some other kind of sandwiches later this week. The other half will go back in the crockpot with some Sweet Baby Ray’s BBQ sauce for our BBQ Shredded Pork Sandwiches today during the game.

With the pork slow cooking and starting to produce some delicious smells, it was time to start preparing the other snacks I had planned. First up, Mini Oreo Football Truffles. These are so easy, you should definitely try them! All you need is a regular size package of Double Stuff Oreos (processed in a food processor until a crumb texture), 4 oz. (1/2 pkg.) cream cheese, two cups melted chocolate (I used milk chocolate), and 1 cup melted white chocolate (I used some vanilla Candy Quick I had in the pantry).

Mix the softened cream cheese into the cookie crumbs, shape like little footballs, and pop them in the freezer for about 15 minutes while you melt the brown chocolate. Dip the mini footballs in the melted chocolate and chill them in the refrigerator while melting the white chocolate. I put the white chocolate in a zip loc bag and clipped a very small bit of the corner, then just free-handed the laces on top of the chilled footballs. That’s it. Easy!

Next, I started working on the Homemade Soft Pretzels. I was not sure how I would do with these because I’ve never made them before. But, I’m all about trying new things. So, here we go.

It starts out with warm water, a little sugar, and a packet of active dry yeast in my Kitchen Aid Artisan Mini Mixer. That just sits for a few minutes before adding some melted butter and flour. It didn’t take long at all to mix the dough up until it started pulling away from the edges of the bowl.

After sitting in a warm place for nearly an hour, it was time to turn the dough out of the bowl and cut it into chunks to form the pretzels. After the pretzels were formed (by rolling the dough pieces into ropes and twisting) I had to put them one at a time into a pan of boiling water and baking soda for 30 seconds each. Then, put them on a baking tray with wax paper spread with a little oil (or probably non-stick cooking spray would work well, too). After brushing with an egg/water mixture and sprinkling with pretzel salt (I did some with cinnamon and sugar, too) it was off into the oven for 12-15 minutes until they were deep golden brown.

This recipe, even though I’d never attempted it before, went without a hitch and they turned out beautifully! Except, I forgot to oil the wax paper, so a thin slice of the bottom of each pretzel stuck and peeled off. Oh well, this went too easily, there HAD to be something to show me I wasn’t quite such the smarty pants! LOL

Bacon Beer Cheese Dip

And now, for the Bacon Beer Cheese Dip for the salted pretzels — OMG! Super easy and delicious. It’s so good, I couldn’t even wait for the game to sample it.

Prep time went pretty quick for this dip, then it needs to bake for 20-25 minutes. This is one of my husband’s favorite things, and he said it is absolutely delicious. So, I guess it is! 🙂

Super Bowl 2018 Food Spread

All right, it’s game time. All the food it ready. In addition to the BBQ Shredded Pork sandwiches, Mini Oreo Football Truffles, Homemade Soft Pretzels, and Bacon Beer Cheese Dip we are serving some old standby snacks: tortilla chips and salsa (in the football shaped bowls), a cheeseball and crackers, and Fritos with Chili Cheese Dip.

I am ready to relax and enjoy the commercials. Hopefully there will be lots of funny ones, because I have a feeling I’m gonna be crying my eyes out while watching This Is Us afterward.

    Ohh, the food… the food is definitely where it’s at for me! I love the look of those oreo football truffles! I’ve made similar cream cheese/oreo truffles in the past and they are SO addicting!
