Every spring and summer, I love buying my avocados here and there throughout the season! There are times when I can’t wait for them to ripen! Even my son loves avocados. I have to hide them from him until they are ripe, otherwise, he wants me to cut them open right away!

Let’s make Crab Salad Avocado Halves

Ingredients Needed: 

large avocados

crab meat (imitation or otherwise)

Juice from half a lemon

mayonnaise

salt

white pepper

paprika (additional to sprinkle as garnish)

Cilantro, to garnish

 Directions:

1.  Halve avocados and remove the pit.

2. Add the crab meat in a medium size bowl.

3. Squeeze the juice from half a lemon.

4. Add mayonnaise and mix well.

5.  Combine remaining ingredients, except garnish, in a bowl and mix together.

6. Scoop 1/3 cup mixture into each avocado halve.

7. Garnish with a sprinkle of paprika and cilantro.

Crab Salad Avocado Halves

The Crab Salad Avocado Halves are the perfect little snack or side dish to a salad. Light and delicious!

Ingredients

  • 1 avocados large
  • 8 oz crab meat imitation or otherwise
  • Juice from half a lemon
  • 1/4 cup mayonnaise
  • 1/4 tsp salt
  • 1/4 tsp white pepper
  • 1/4 tsp paprika additional to sprinkle as garnish
  • Cilantro to garnish

Instructions

  • Halve avocados and remove the pit.
  • Combine remaining ingredients, except garnish, in a bowl and mix together.
  • Scoop 1/3 cup mixture into each avocado halve.
  • Garnish with a sprinkle of paprika and cilantro.

Notes

Makes (4) avocado halves with 1/3 cup shrimp salad in each.
