How many parents have to struggle with little picky eaters that do not want to eat or only want to eat certain foods?
This is something that I think every parent has to deal with. In my household, my baby brother can’t stand tomatoes, but guess what he has never had a problem with…tomato sauce and ketchup.
Little does he know that he was been eating Bella Sun Luci Sun Dried Tomatoes for a while now. I even had bags of Sun Dried Tomatoes in the pantry.
It’s fun putting the delicious Bella Sun Luci Sun Dried Tomato products in the many dishes that he already loves and he doesn’t notice them at all. I’ve used the Sun Dried Tomato Halves with Extra Virgin Olive Oil and Italian Herbs 8.5 oz in our spaghetti and meatballs. I just mix them in when I am cooking the ground beef and he does not even notice.
The Bruschetta with Italian Basil Sun Dried Tomato and Extra Virgin Olive Oil is delicious on a slice of toasted french bread that has been toasted and topped with some sweet goat cheese.
The best thing that I made with the Bella Sun Luci Sun Dried Tomatoes is my Chicken Enchilada Bites that have enchilada sauce infused Chicken, Sun Dried Tomatoes, Cheese and Biscuits.
Chicken Enchilada Bites Ingredients/Supplies
- Grands Biscuits
- Tomato sauce
- McCormick Enchilada Sauce Mix
- Mexican Cheese
- Cooking Spray Butter
- Muffin Pan
- Slow Cooker
For this recipe you start off slow cooking 4 pieces of boneless skinless chicken in some McCormick Enchilada sauce.
By cooking the chicken in the sauce you are infusing the chicken with all of that flavor and it tastes delicious just by itself but we can’t stop there. I cook the chicken until I can easily shred it with a fork.
Now, this is where you can start making your Chicken Enchilada Bites for a meal or just a snack.
The first step is to spray your muffin pan with some spray butter and set it aside. You will need to get your can of Grand Biscuits and split each one in half. This will create the bottoms for your Chicken Enchilada Bites.
You place one half of the biscuit in the bottom of all the muffin cups, my muffin pans are to make jumbo muffins. So I flatten the biscuit some, so that it can go up the sided of the muffin cups.
Then fork in some of the Chicken Enchilada meat into the top of the biscuit in the muffin tin. I do this to all of the muffin cups that I make.
On top of the Chicken Enchilada Meat, I add a spoonful of the Julienne Cut Sun Dried Tomatoes in Olive Oil with Italian Herbs. This will blow your taste buds mind!
Once all your cups have the delicious Julienne Cut Sun Dried Tomatoes in Olive Oil with Italian Herbs, then put a generous topping of cheese on the tops.
Bake them for 30 minutes or until the top is melted and the base is cooked.
I love these bites for so many reason that a parent can not help to love. It has that comfort food taste with the biscuit and cheese, Veggies from the tomatoes, and meat from the chicken.
The Bella Sun Luci Sun Dried Tomatoes take this dish to a whole other level that is astonishing!
